Poached Knight Dory in Parmesan Crisp Roll

Recently I've watch a show on Food Network Asia, it is Paula's Best Dishes. She make a Parmesan crisp just by spread the Parmesan flakes on a hot pan and the Parmesan starts to melt and hardened. So simple and attractive. Now I am making the dory in Parmesan crisp roll by using the same method as Paula's.



Poached Knight Dory in Parmesan Crisp Roll

Ingredients: black pepper, parsley, Parmesan flakes, butter, olive oil, onions, thyme, salt and sugar.

Method:

Poached Dory



Place some dory fillets in a pot of water with thyme, olive oil, butter, black pepper and parsley. Switch on your stove, medium hot. Poached for 10 minutes. Then tear off your dory into chunks. In a bowl, mix the dory with parsley, black pepper, salt and a bit of sugar.

Parmesan Crisp

On a hot pan spread some Parmesan flakes and wait until it cook and hardened. Take it and put it in a plate.

Place some dory mixture on the Parmesan Crisp. Then roll it. A few minutes the Parmesan is hard completely.
