Smoked Dory with Grey Mushroom
Ingredients: Dory, Black Pepper, salt, garlic, shallots, wooden chips, grey mushrooms, water, olive oil, thyme, eggs, flour, Bay leaves.
Method: Place the wooden chips on a aluminium foil. Add some thyme. Wrap the wooden chips and make a few holes. Add some water inside. Preheat your grill and add the pack of wooden chips. Pour a touch of olive oil beside the package. Sautee some garlic and shallots. When the package is start to smoke, put your Dory fillets that is marinated with salt and pepper on the sautéed shallots and garlic. Flip your fillets for every 5 – 10 minutes. Beat 3 eggs until it smoothen. Then coat it with the flour that is mix with pepper. Then fry it until it crispy. Sautee some shallots with some salt and sugar. Add some chicken broth and bay leaves. Place some flour in a bowl. Mix it with some hot water. Then add it in the sauce.
